I had been reading and hearing for a very long time (since starting Paleo) that there was nothing quite like the feeling of drinking a really nice bone broth for what may ail you. There are articles all over the place recommending the benefits like here, here, here and here, of a good bone broth whether it be the broth on its own or as the base for something else. In addition to that I knew from experience that nothing compared to cooking with a really good quality home-made stock or broth. Not to mention that you know what is going into it.
The recipes that I am sharing here will allow you to get into making a really simple beef bone broth and then use some of it to make a really beautiful and fresh Pho. I really like the recipes that Alyssa posts on Everyday Maven as they are easy to follow and simple to execute. There are lots and lots of broth recipes out there (some in the above links) but this keeps it as basic as possible by being bones, water and apple cider vinegar. Pretty simple.
So here it is, get cracking on it this weekend and let me know how you go. No doubt you will be converted by Sunday night some time.
